Fu Chai is at the Atithi Hotel in Pondicherry, where he meets the sous-chef Senthil to learn more about the Poolside barbecue grill. Going with the theme of the restaurant, Senthil first serves pepper fried soup. After a nice hot soup, Mexican lamb satay is served as an appetizer. As the name suggests, it is a Mexican cuisine, where the minced lamb is first marinated in Mexican marinade, and barbecued. For main course, the sous-chef then serves cajun barbecued chicken. A simple dish marinated with cajun seasoning will result in tender moist chicken bursting with flavour.
